Healthy Quick-fix: Vegan Tahini Vegetables Udon Stir-fry

I have always been a fan of udon noodles, especially the dried one which has a more chewy texture and won’t turn sour as frozen udon does.

As I was craving for udon noodles for the cold weather, to be specific, a bowl of udon noodles not in boring chicken broth soup🍜, I decided to make this healthful Vegan Tahini Vegetables Udon Stir-fry. Wait, Tahini? Tahini is a Middle East Sesame Paste made with purely sesame seeds, while Tahini is in no doubt, a multivitamin superfood with loads of minerals, vitamins and proteins.

Yields2 Servings

 90 g Organic Udon
 ½ Onion
 1 Garlic
 ½ Bell Pepper
 1 cup Greens (of your choice)
 2 tbsp Tahini
 2 tbsp Olive Oil
 1 pinch Salt
 1 dash Lemon

Cook the organic udon in boiling water for about 8 mins. Once cooked, drain and set aside.

When the udon is cooking, dice the garlic, onion, bell peppers and any greens of your choice.

Heat a pan in medium-high heat. Add 1 Tbsp of olive oil.

Add garlic, onion and fry till browned. Then add bell peppers and greens until they are cooked.

Add udon noodles, tahini and salt, and mix well.
